Easter Weekend Recap: Part 2

Following my fun lunch and drinks with Torie I attended Easter Vigil Mass.  It had been a few years since I went to the evening service and forgot just how long it is.  I probably should have had a coffee before!  I was able to sleep in on Sunday and enjoy a leisurely morning drinking coffee before I started to prep and cook Easter Dinner!!




I made a citrus sangria that soaked for two days.  The sangria had a base of white wine and fresh orange juice with slices of oranges, grapefruit and pineapple.  It was light and not overly sweet.

My roommate made four different types of deviled eggs; avocado, sour cream, traditional and sweet relish!  They were delicious!!

I picked up a spiral-cut, bone-in ham.  The glaze was very basic and really flavorful!  I mixed together  raspberry jam, dijon mustard, brown sugar and water.  Over medium heat, I brought the sauce to a low simmer and glazed the ham every 15-minutes for the last 75 minutes in the oven.  


My friend, Alex, made this salad!  Baby spinach, chevre, candied pecans and blackberries!  




Roasted Carrots tossed in EVOO, red pepper flakes, salt and pepper.

Alex also made delicious scones.  I made sea-salt rice krispy treats!

  1. This looks like such an awesome feast! I would love to have tried the deviled eggs. We had a ham on Easter and made some yummy split pea soup in the crockpot with the leftover ham bone. Probably my favorite thing to do with leftover ham!
